Koeksisters are a traditional South African pastry that is deep-fried and then soaked in a sweet, spiced syrup.

Ingredients:

For the Dough:

- 4 cups all-purpose flour ( you can replace with any gluten free flour as well just increase the milk / soya milk to make the dough suitable - i almost doubled the milk but you will figure it out)

- 4 teaspoons baking powder

- A pinch of salt

- 2 tablespoons butter, softened

- 1 cup milk (soya milk works brilliantly as well)

- 2 large eggs

For the Syrup:

- 2 cups sugar

- 1 1/2 cups water

- 1 cinnamon stick

- 1 teaspoon lemon juice

For Frying:

- Vegetable oil for deep-frying

Instructions:

1. Dough Preparation:

- In a large bowl, sift together the flour, baking powder, and salt.

- Add the softened butter and rub it into the dry ingredients until the mixture resembles breadcrumbs.

- In a separate bowl, whisk together the milk and eggs.

- Make a well in the center of the dry ingredients and pour in the wet ingredients.

- Mix until a soft dough forms. Knead the dough on a floured surface until smooth.

- Cover the dough and let it rest for about 30 minutes.

2. Syrup Preparation:

- Combine sugar, water, cinnamon stick, and lemon juice in a saucepan.

- Bring the mixture to a boil, stirring until the sugar dissolves.

- Reduce the heat and simmer for 15-20 minutes, allowing the syrup to thicken slightly.

- Remove from heat and let it cool. Once cooled, remove the cinnamon stick and cloves.

3. Shaping the Koeksisters:

- Roll out the rested dough on a floured surface to a thickness of about 1/2 inch.

- Cut the dough into strips, approximately 4 inches long and 1/2 inch wide.

- Make a slit in the center of each strip and pull one end through to create a twisted shape.

4. Frying:

- Heat vegetable oil in a deep fryer or a large, deep pan to 350°F (180°C).

- Fry the koeksisters in batches until they are golden brown and cooked through, about 4-5 minutes per batch.

- Use a slotted spoon to remove them from the oil and drain on paper towels.

5. Syrup Coating:

  • make sure your sysup is icy cold

- Dip the hot koeksisters into the cool syrup, ensuring they are fully coated.

- Allow the koeksisters to soak in the syrup for a few minutes, turning them to ensure even absorption.

6. Serve:

- Allow the koeksisters to cool and the syrup to set before serving.
