Ingredients:
1 lb beef or pork, cubed
1 onion, diced
2 carrots, diced
2 potatoes, diced
2 tbsp tomato paste
4 cups beef broth
1 tbsp paprika
1 tsp caraway seeds
Salt and pepper to taste
Sour cream, for garnish
Fried eggs, for garnish (damn you need to add this)
Octopus hotdogs, for garnish (I'm not a garnish fan)
Instructions:
Brown the meat: Heat oil in a pot over medium heat. Add the meat and cook until browned on all sides.
Add vegetables: Add the onion, carrots,and potatoes to the pot and cook until softened.
Stir in tomato paste: Add the tomato paste and stir to coat the vegetables.
Add broth and spices: Pour in the beef broth and add the paprika, caraway seeds,salt, and pepper. Bring to a boil, then reduce heat and simmer for 1 hour, or until the meat is tender.
Serve: Ladle the stew into bowls and garnish with sour cream, fried eggs, and octopus hotdogs (if desired).

1 lb boneless beef chuck, cut into bite-sized pieces
2 tbsp vegetable oil
1 onion, diced
2 carrots, diced
2 celery stalks, diced
2 cloves garlic, minced
1 tsp dried thyme
1 tsp smoked paprika
1/2 tsp ground caraway seeds
1/4 cup tomato paste
4 cups beef broth
2 bay leaves
1/2 lb potatoes, peeled and diced
1/2 cup frozen peas
Salt and pepper to taste
Sour cream, for garnish (cream makes everything better)
Fried egg, for garnish (not an option - just do it)
Octopus hot dog, for garnish (like above)
Instructions:
Heat oil in a large Dutch oven or pot over medium heat. Season the beef with salt and pepper. Sear the beef in batches until browned on all sides. Remove from the pot and set aside.
Add the onion, carrots, and celery to the pot and cook until softened, about 5 minutes. Add the garlic, thyme, paprika, and caraway seeds and cook for another minute, until fragrant.
Stir in the tomato paste and cook for another minute. Pour in the beef broth and bay leaves. Bring to a boil, then reduce heat to low and simmer for 30 minutes.
Return the browned beef to the pot and add the potatoes. Simmer for another 20-25 minutes, or until the potatoes are tender.
Stir in the peas and cook for an additional 5 minutes. Season to taste with salt and pepper.
Serve hot, garnished with a dollop of sour cream, a fried egg, and an octopus hot dog (if desired).
